Ingredients: (4 Servings)
- 1 medium size chicken
- 1/2 glass of EV Olive Oil
- 18 Once of fresh ripe tomatoes (or the equivalent weight in canned, peeled tomatoes)
- 2 good size sweet peppers
- 1 onion
- Salt and black pepper (as you like)
Cut the chicken into small pieces and let it brown in a pan with half the EV olive oil and chopped onion. When it is well colored, add salt and grounded black pepper then add the tomatoes, peeled and sliced; continue cooking over medium heat.
Slightly roast peppers on a hot cooking plate, cut into strips, clean the skins off (if you do not like them) and cook them (covered and medium heat) in a separate pan with remaining EV olive oil. When completely cooked, add the chicken, cook them together for about 10 minutes and serve hot.
